Roasted pork with crisp crackling

You will need:
2kg pork foreloin
Large Sea salt flakes

Preheat the oven to 200°C/400°F/gas mark 6.

Score the pork rind and then rub in the large sea salt flakes.

Place the pork in a roasting tin and roast for 1 ½ hours.

Remove from the oven and leave to rest for 15 minutes. Then carve the pork into slices and serve with the crisp crackling.
