Pepper nuts are one of our favourite Christmas treats. There is no pepper in them though!
You will need:
375 plain flour ½ tsp baking powder ½ tsp freshly grated nutmeg ½ tsp ground ginger 2 tsp ground cinnamon 175g salted butter 180g dark brown soft sugar 1 egg, beaten
Sift together the flour, baking powder and spices. Melt the butter and stir it into the flour mixture. Add the sugar and egg and knead the dough until smooth on a floured surface. Let the dough rest for one hour at room temperature.
Preheat the oven to 180°C/350°F/gas mark 4. Form the dough into small balls and place them a little apart on a baking tray lined with baking parchment. This dough makes two batches. Bake for 10 min. and cool on wire rack. Store the pepper nuts in an airtight tin.
