Pepper Cookies

Creating pepper figures is part of cosy Christmas preparations for both children and adults.

For the dough you need:
150ml golden syrup
250ml dark soft brown sugar
2 tbsp ground ginger
2 tsp ground cinnamon
½ tsp ground cloves
175g softened salted butter
150 double cream
½  tsp bicarbonate of soda
750g plain flour

For the icing you need:
300g icing sugar
selection of food colors

Mix the syrup, sugar, spices and butter in a big mixing bowl, beating until soft and smooth. Then add the cream and mix again. Sift together the bicarbonate of soda and flour, then mix into the butter mixture.

Flour your work surface and knead the dough well, then wrap in cling film and leave to rest in the fridge overnight.

When ready to bake, preheat the oven to 200°C/400°F/gas mark 6. Roll out the dough really thinly on a floured surface and cut out with cookie cutters, using different shapes and sizes. Place on baking trays lined with baking parchment and bake for about eight minutes. Leave to cool on a wire rack.

Divide the icing sugar between small bowls and add different food colors, then add water a little bit at a time, until the icing is smooth (it should not be too runny). Decorate the cookies when they are cold.
