Æbleskiver

My Granddad Besse baked the best æbleskiver in our family and he enjoyed it!
 
What you will need:
40 g fresh yeast
800 ml lukewarm whole milk
600 g plain flour
2 1/2 tsp salt
1 1/2 tsp ground cardamom
2 vanilla pods
3 tbsp caster sugar
4 eggs, separated
2 apples
100-150 g salted  butter
 
How you make them:
Let the yeast dissolve in the lukewarm milk and sift together the flour, salt and cardamom in another bowl. Slit the vanilla pods lengthways, scrape out the seeds with the tip of a knife and ad them to the dry ingredients with sugar, Whisk the egg yolks into the milk mixture. Add the dry ingredients and beat to make the dough. In a seperate bowl, whisk the egg whites until stiff, then fold them into the dough. Now let the batter rest for 40 minutes.
Peel and core the apples and cut them into cubes. Heat the æbleskive pan at medium heat and melt a little butter in each hole. When the butter is melted you are ready to bake by pouring batter into each hole and adding a piece of apple in each hole too. Cook for 3 to 5 minutes (until golden brown) and then turn them over. Now fry the other side for about 4 to 5 minutes and then remove from the pan. Use the rest of the batter the same way and serve immediately with blueberry jam and dusted with icing sugar.
